The first twist was lockdown, which gave many of us more than 10 minutes to cook. Raymond also began to consider how the pandemic might affect what we ate. Perhaps we would finally value local produce and tackle food waste. Every day, he would call Maman Blanc in France. Then, in June, Maman Blanc, 97, died from a fall. It was a shock. His project took on new significance.
He would go all out on her values, championing the garden, seasonality, vegetable varieties and simplicity.
His mother would ask Raymond, the middle of five children, to bring her particular varieties of vegetables and he became expert at finding them to please her. It was never about this global name of potato. Today, gardeners and chefs at Le Manoir know the value of varieties. Once, Raymond made them taste 40 types of chillies before he decided which to plant. Simply Raymond is a collection of my favourite home-cooked recipes.

Indeed he has worked with some of the very best, including architectural building specialists Symm, garden tour de force Chris Beardshaw for the recently created wildflower meadow, as well as local craftsmen. But he does give unequivocal direction. Before doing a room I will be in that space for a year just feeling it. So I am completely involved in every detail of every room, or the garden or every aspect of service. It is the hardest thing to learn.
He is minutely focused on detail, and he even personally sketched out a carpet pattern for the Arabesque suite — first on paper at a desk, but then, unsatisfied with a lack of proper perspective, painstakingly upon enormous pieces of paper on the floor — a process he reveals took three days to achieve. This quest for perfection is repeatedly apparent. Endearingly, Blanc seems compelled to point out the tiniest of imperfections — drawing attention to a bespoke light switch made to his personal design, which he thinks, in retrospect, is an overcomplicated result; and the edge of a beautiful stone bath surround, which protrudes, he thinks, just a few millimetres too far.
This intense desire comes always from the thought of the guests. When I first saw this house I fell in love so completely with it — I love the mini grand drive, the different gardens, the yellow stone from Oxfordshire. I fell into a fairytale.
